Marinated Chunky Tofu & Sweet Potato Stew
Served with rice & veggies…
In the morning I remove all skin from the tofu cubes and leave the tofu in the fridge for about 1-2 hours. Just before dinner I heat some garlic sauce in a pan on low.
Add the marinated tofu to the pan. You want to cook the tofu just until it’s a little firm but not dried out. When the tofu is warm in the pan, cut into thin strips. Place the strips on a serving dish. You can slice some greens in a fork or knife for garnish. Top the dish with steamed rice and veggies.
Add 2 cups of uncooked rice noodles to a bowl. Put a light layer of marinated tofu in the middle of the noodles. Add fresh veggies to the middle of the noodles. Toss the noodles around to distribute the marinade. When the noodles are cooked, place the veggies in the middle. Add some of the tofu greens and sauce. Mix the veggies. Serve right away.
Cheesy Tofu & Sun Dried Tomato Samosas
Combine the following ingredients in a bowl. You can add up to 1 cup of shredded mozzarella on top of the samosas if you wish.
Sun dried tomato paste
Light coconut oil
Sweet corn flour
Cut 1 1/2 cups of leafy greens into small squares.
Preheat your oven to 350F. Grease some cookie sheets. In a bowl mix together the corn flour, garlic salt, black pepper, turmeric, brown sugar, an egg. Cut 1/2 inch pieces of frozen vegetables (corn, onions, bell peppers, broccoli). Mix the corn flour mixture into the veggies. Add the yellow onion mixture. Dump on the cookie sheets. You can put a small piece of dough in the middle of each samosa. Bake for 10 minutes.
Bake until you see the green dough starting to turn brown. Once the dough is finished, let the samosas cool completely before serving.
The Best Way to Store Tofu
Per the instructions on EatWell, a vegan meal delivery service and catering platform, tofu can be stored in the fridge or freezer at room temperature for up to a week.
If you don’t have a freezer, wrap tofu with freezer paper or cling wrap, place on a sheet pan, and stick it in the fridge overnight.
These vegan soy cheeses have a little crunch from the chickpea flour and are also infused with turmeric and nutritional yeast. Look for different brands to see if one makes your mouth water for this cheesy flavour.
You can also keep tofu (as well as tofu-on-top meals) in the fridge for an even easier weeknight dinner.
You can bake tofu all you want, but once it’s cooked, there’s really not much more to it. Now there is the good news – it tastes fantastic if left plain.
