Fresh Tomato Pasta

Make this easy, tasty, fresh dinner in a snap with this easy homemade fresh tomato pasta. There are just so many great things about this super easy meal. First of all, if you’ve never had a tomato Pasta before, you’re missing out on one of the most delicious, flavorful ways to eat fresh whole-food pasta that there is. Second, you can’t go wrong by making it at home. You can even make it in the oven if it’s warm outside!

For this fresh tomato pasta recipe, I like to start with 2 pounds or so of tomatoes cut up into chunks. I also like to get a good pack of parmesan or some good Italian herbs, mix these up together in a bowl and sprinkle over the tomatoes. Also, I like to thinly slice the onions, bell pepper or mushrooms as well. Then I add a good pack of dry pasta (I prefer linguine pasta) and some good olive oil, and I’m good to go!

So how do you make a fresh tomato pasta? Easy, just throw the cleaned and cut up tomatoes in a bowl and add some good olive oil. Then I mix them all up good and easy. I usually toss in some chopped onions, and mushrooms if they’re available. It’s all about adding as much as you need, mixing it all up well and making sure it stays together.

Now for the really great part of this recipe, and what makes it so great, is the fact that you can adjust it to be gluten-free or even vegan! Most recipes call for tomatoes, but it’s pretty rare these days to find a recipe that calls for cooked pasta. With this fresh tomato pasta recipe, you have the ability to change it to being gluten-free by simply removing the meat from the pasta. Cooked pasta is okay to eat, but it certainly isn’t something you have to have on your plate. 

Other than the removal of the glutan, the only other thing you need to change when making this type of fresh tomato pasta, is the cheese. Since you’ll be using the actual sauce to cook the pasta in, you can easily remove the cheesy component and then replace it with another ingredient. As an alternative to the traditional tomato sauce, you could use a creamy cheese such as cream cheese, or even a cheddar cheese, which is very easy to prepare and makes a wonderful change up from the more typical types of cheeses out there. You could also substitute vegetable stock for the olive oil, which also adds a wonderful flavor to the dish.

The preparation of this dish is fairly easy. All you really have to do is cut up the fresh tomato pasta and put it into the strainer. Then, place the cooked pasta into the strainer, add the olive oil, cheese, and any other additional items that you want to include, and then just sprinkle over the top. Then, let the mixture sit in the pot and bring it to a boil, stirring to mix everything together. When it’s done, you’ll be able to serve it hot, and it makes a great alternative to the more traditional tomato sauce.
